Q&A: ‘Nasties’-free sauces that are creating a stir

For this week’s feature, we will be getting to know more about Paige Brierley, the entrepreneur behind the sauce making brand Lambruk Pantry. Based in Mullumbimby, New South Wales, Lambruk Pantry has shaken up Australia’s food industry with its innovative approach to sauce-making that resulted in the creation of versatile food products. Paige’s efforts were rewarded with a bronze medal for her Blueberry and Apple Sauce at the prestigious Royal Melbourne Sweet Dressing and Sauces Awards in 2023.

ISB: What initially inspired you to create your own sauces?

PB: I was so sick and tired of reading the labels of other products and seeing that their sauces contain so much sugar, filler, and preservatives. I wanted a sauce to have on my Sunday morning pancakes and waffles that was yummy but not full of the nasties so I decided to make them myself.

ISB: And when and where did you launch Lambruk Pantry?

PB: I launched the business in 2020 but I was already coming up with my own recipes for three years prior to starting the business.

ISB: How do you ensure the quality of your products while keeping pace with the growing demand for them?

PB: We have been really lucky that we get to work with amazing small family-run farms where we get our produce. They have been instrumental in helping us keep pace with the growing demand we are getting for our products. We make an effort to go directly to them and pick the produce. I am proud to say that over the past four years, we have managed to build and strengthen our relationship with the farms.

ISB: Why is it important for your business to be able to work closely with local farmers?

PB: Most of my extended family are working on farms and grew up in the country, so working with farmers is something that is very close to my heart. I know that there is so much hard work that goes into producing a high-quality product.

ISB: Where do you see Lambruk Pantry’s growth in the next couple of years?

PB: We would love to get into new food ranges like baby food, cordials etc. We also are looking forward to further growth. In fact, we will be opening our factory outlet this year in Mullumbimby.

ISB: What is the most important insight you’ve gained in this business journey that other entrepreneurs can learn from as well?

PB: Take your time. You don’t have to do everything straight up and just enjoy seeing how your business get to grow over time. I myself enjoy seeing how far we have come each year. Most importantly, believe in yourself and your product as it will help fuel your business’ growth and eventual success.
